Challenge of the Day – Day 8

Today’s challenge is designed to get me out of my comfort-food zone: I am going to eat  at least 3 different veggies today.  I have gotten so bad about eating my veggies since the weather has gotten colder. During warmer temps it’s not such a big deal, but when it gets cold I want carbs, carbs, and more carbs, and maybe a side of carbs to go with it, so my focus will be on vegetables today.

Mmmm….veggies.

  1. Good girl! When it gets cold, I still like veggies, but only hot ones. I haven’t had a good salad for quite a while. Maybe that will be my challenge today…

  2. Like Debby, I like my veggies hot this time of year. Do you have a crockpot? That might be a way to cook a bunch of veggies at once and then be able to reheat as needed. (I like ratatouille made in the crockpot, although you could always make it without the eggplant if you’re not a fan.)     You can also sneak shredded veggies into all kinds of foods: chili, meatloaf, spaghetti sauce (ala Debby).

    • It went pretty good! Yesterday was uber-busy day and so I made a stew in the crockpot yesterday morning. I had tomatoes, celery, squash, carrots, and onions in it, so I guess I exceeded my 3-veg goal! Yay!! 🙂
